A classic Austrian dessert of apples, pine nuts and raisins stuffed inside a very thin almost transparent dough. Strudel dough is a simple dough of flour, water, and a small amount of fat (in this case, vegetable oil). The apple-filling spiced with cinnamon make this desert delicious that everyone will love!
Serve it a bit warm with vanilla ice cream or vanilla sauce!

What do you need?
For the dough:
310 gr of all-purpose flour
150 to 170 gr of lukewarm water
3 tablespoons of vegetable oil
1/2 teaspoon salt
For the filling:
60 grams of unsalted butter.
120 gr of breadcrumbs.
5 large apples such as Golden Delicious, Granny Smith, or Gala peeled, cored, cut into cubes.
50 grams of toasted pine nuts.
3/4 cup of raisins.
60 gr of granulated sugar.
5 gr of cinnamon.
Pinch salt.
1 teaspoon zest from 1 lemon.
Juice of 1 lemon.
How to proceed?
Step 1- prepare the Strudel Dough
In a mixing bowl add the flour, salt, oil, and water mix until almost combined. You should have a dough that is soft but not sticky.
Knead until the dough is smooth and elastic, about 5 minutes.
Form dough into a ball. Lightly coat it with vegetable oil, cover and let rest for 1 hour.
Step 2 - prepare the Apple Filling
In a large bowl, combine the apples, lemon juice, lemon zest, sugar, cinnamon, pine nuts and raisins. Stir to coat evenly.
Let it rest for 30 minutes.
In a pan over medium heat melt the butter, add breadcrumbs and cook over medium heat until golden brown. Set aside to cool at room temperature.
Combine the breadcrumb mixture with the apple mixture.
Step 3 - Assemble and cook the apple strudel
Preheat oven to 180°C.
Place a parchment paper on a work surface. Using a rolling pin, roll over the dough into a rectangle. Make it even and as thin as possible.
Spread the apple mixture evenly down the center of the pastry, lengthwise.
Fold the sides of the dough around the apples. Seal the dough together by lightly wetting the pastry and pressing it together.
Transfer to baking sheet.
Bake the strudel for 35 to 40 minutes, until golden brown.
Serve warm or at room temperature.
