Cooking the ribs in the oven and being able to obtain the same result as a barbecue cooking is really quick and easy.
We tasted them in a famous tapas bar in Barcelona and we couldn't give up cooking them at home!
What do you need
1 kg Pork ribs
1 clove Garlic
Paprika (smoked – spicy – sweet) to taste
salt to taste
Pepper 3 tablespoons
Extra virgin olive oil
1 sprig Rosemary to taste
Wildflower honey
1 hot pepper
1 tablespoon granulated or cane sugar
How to proceed
Prepare the mixture to flavor the pork ribs: in a bowl add the sweet paprika, a little bit of the spicy and smoked paprika, the salt, the minced rosemary together with the chilli pepper, the pepper, the peeled and chopped garlic, a spoon of granulated or brown sugar and mix everything together.
Massage the meat with the extra virgin olive oil to grease it evenly and sprinkle the mixture of aromas, taking care to press a little to better adhere the spices.
Wrap the ribs in transparent film and let them rest in the fridge for about 2 hours.
Bring the oven to 180°C ventilated or static. Time has passed, fix the ribs on a plaque coated with oven paper.
Cook for about 30/40 minutes.
The ribs will be cooked through when the meat falls away from the bone.
Remove the ribs from the oven and brush them with honey.
Put back in the oven and continue cooking until the honey is caramelized. Serve the honey glazed pork ribs hot with lemon zest if desired and tasty patatas bravas!
