A perfect way to use up leftover mashed potato! The kids LOVE this easy bite-sized snack. They are simple and totally addictive. They are fun to prepare with kids and the result is a croquette warm, soft and pillowy on the inside with a light, crunchy texture on the outside!

What do you need?
500 gr of leftover mashed potato.
1 egg at room temperature.
50 gr of parmesan cheese.
Salt to taste.
Pepper to taste.
Breadcrumbs.
Extra Virgin olive oil.
How to proceed?
In a mixing bowl, add the mashed potatoes, egg, grated parmesan cheese salt and pepper.
Stir with a spoon to mix the ingredients to obtain a soft and dry mixture.
Take a tablespoon of mashed potato and flatten it in your hand. Give it a cylindrical shape.
Dip the croquette into breadcrumbs.
Place on a baking sheet, drizzle with olive oil and bake on a high heat for 12-15 minutes until the croquettes are golden.
