320 grams Basmati rice or Jasmine
3 large eggs
250 grams of spring peas
150 grams diced ham
1 small fresh onion
4 Spoons of sesame oil
1 tablespoon of soia sauce
salt to taste
How to proceed.
First of all, bring a saucepan full of water and salt to a boil.
Cook the basmati rice for 5 minutes or in any case check the cooking times of the package and cook for about half the time indicated! You will have to take it out super al dente, half hard, drain it and let it cool in a bowl and every now and then you will have to mix it with your hands.
Since the rice is hard enough, it will not stick, even if it continues to cook slightly! This secret was revealed to me directly by the owner of the Chinese restaurant! so try and see!
Let the rice cool completely for about 20 - 30 minutes.
In the meantime, you can prepare the dressing.
In a non-stick pan or wok, heat 2 - 3 tablespoons of oil, add the eggs lightly beaten with a pinch of salt, place on medium heat and shred the eggs with a fork for a few seconds.
Scrambled eggs must be light, not golden and not dark! immediately remove from the fire.
In a separate pan heat the thinly sliced onion 1 tablespoon of oil, heat 1 minute, then add the peas, cook over medium heat until tender.
Then add the peas to the eggs, heat, then add the cold rice!
Skip the Cantonese rice over medium heat, at this point add 1 tablespoon of soy sauce, I don't like too salty preparations, but if you like you can add another tablespoon.
Finally add the cooked ham and let it mix for a few more seconds. The ham must not cook!
