Caramelized onions are originally used in dishes like French onion soup. They are as well delicious as an addition to various salads and sandwiches. Try them with hamburgers for a delicious gourmet burger effect!

What do you need?
2 medium yellow or red onions
Extra virgin olive oil
2 spoons of sugar
salt
2 spoons of balsamic vinegar
How to proceed?
Cut the onions into slices of ½ cm and divide them into rings.
Prepare and oil a pan over medium heat and add the sliced onions.
Add sugar and 2 spoons of water and simmer stirring every now and then to avoid from stiking to the pan.
Continue to cook and stir until the onions have a rich browned color, for at least 30 minutes.
Add vinegar and salt and finish cooking over high heat for 5 to 10 more minutes.
NOTES:
The secrets to a successful caramelized onions dish:
Avoid slicing thinly the onions: it will burn faster and stick to the pan and won't caramelize.
Avoid overcrowding the pan with sliced onions: the more onions you add to your pan the more time it takes for it to caramelize!
Onions should be cooked on a medium low heat. Remember that onions require 30 to 45 minutes of cooking to caramelize.
