In many families the dinner on December 24th is based on fish and seafood.
Every year, a few days before Christmas, I call my old friend Claudio who sells fish and we decide together what I will prepare for Eve dinner!
This year he suggested the sea cicadas, tasty and meaty, and the local cod, rare to find.
I bought many sea cicadas that I used both as an appetizer, by simply cooking them for a few minutes on a pan over high heat, and as an ingredient for a rich seafood risotto!
As a second course I prepared cod in potato crust and mini pavlova for dessert.
