Tortillas are a thin flatbread considered an integral part of Mexican cuisine used as a base to create tacos, burritos, enchiladas, quesadillas and tostadas… Whether you prepare it from corn or flour, freshly made tortillas are such a treat! We admit…it takes some time to get familiar with making tortillas at home but once you do, we are sure you will never by it from the store ever again. Both corn tortilla and flour tortilla doughs are easy to make, you only need few ingredients, give it a try and Enjoy!

What do you need?
Corn Flour Tortillas
4 cups of Masa Harina (the traditional flour used in Mexico for corn tortillas).
3 cups of hot water (not boiling, as hot as your hands can stand).
Salt (optional).
Regular Flour Tortillas
4 cups of All-purpose flour.
1 2/3 cup of hot water (not boiling, as hot as your hands can stand).
1/4 cup of Vegetable oil (you can replace with Extra Virgin olive oil if you prefer).
1 teaspoon of salt.
How to proceed?
Step -1- Mix the Dough:
In a mixing bowl add the flour and salt, if using, and mix.
Slowly stir in warm water until no dry bits of dry flour remains. If making the flour tortillas add vegetable oil as well.
Using your hands, mix together the dough. (the dough should be moist, but not sticky): the consistency should be similar to granular playdough.
Transfer the dough onto a work surface. Knead until the liquid is evenly incorporated and it becomes smooth all over.
Divide the dough and roll into 12 equal small balls. Set aside and cover with a kitchen towel.
Step -2- Roll the Tortillas:
Using a tortilla press create create a 3 mm high flat disc of dough from each ball. As an alternative to tortilla press we used 2 plastic bag and 2 books. You can as well use 2 pieces of baking paper and 2 cutting boards: Place a piece of plastic on a book or cutting board, place the dough ball, then another piece of plastic bag and other book or cutting board. Use your weight over the books or boards to create a 3 mm high flat disc of dough.
Step -3- Cook the Tortillas:
Heat a large nonstick sauté pan Over medium-high heat (the pan should be quite hot).
Remove slowly the tortilla from the plastic bags and put it over the hot pan.
Cook the tortilla for about 1 minute then flip it once and continue cooking it an additional 30 seconds or until golden brown spots appear on both sides.
Transfer to a tortilla warmer or bowl with clean kitchentowel to keep warm while you roll out and cook the remaining tortillas.
