In Italy we call them "Sofficini": they are very famous crispy pancakes that can be found in the supermarket and that children get to know from an early age thanks to a captivating commercial on TV ...but we prepare them at home with our infallible recipe!
What do you need
200 ml milk
20 gr butter
200 floor
Salt to taste
100 gr mozzarella
100 gr ham
100 gr tomato sauce
Some leaves of fresh basil
2 eggs
100 gr breadcrumb
How to proceed
Boil the milk and butter then add the flour and salt until you get a homogeneous mixture that must cool down. Roll out a thin sheet (but not too much otherwise it breaks) and make circles with a cup. We stuffed it with ham and mozzarella and with tomato sauce, mozzarella and basil. Combine the edges well using a fork, pass them in the egg and breadcrumbs and bake them in the oven at 200 C until golden.
