Sardines, are small, oily fish, and a great source of omega-3 fatty acids. Sradines were once found in great abundance around the island of Sardinia in the Mediterranean where this tasty dish finds it origins!

What do you need?
600 gr fresh sardines cleaned
1/2 cup of all purpose flour
2 eggs, lightly beaten
1 Cup fresh breadcrumbs
salt to taste
pepper to taste
Oil For Frying
How to proceed?
Rinse the sardines and pat dry.
Place flour in a shallow bowl; season with salt and pepper.
Lightly beat eggs in another shallow bowl.
Place the breadcrumbs in a third shallow bowl.
Dredge in flour, shaking off excess.
Transfer to bowl with egg mixture and turn to coat. Lift from bowl, allowing excess to drip off.
Coat with the breadcrumbs, pressing well on both sides to adhere
Place the breaded sardines on a tray. Continue until all of the sardines are coated
Heat enough oil (180 °C) in a large frying pan to shallow fry.
Working in batches, fry sardines, until golden brown and cooked through, about 3 minutes per side.
Drain, dry, add salt and serve hot or at room temperature with simply a lemeon wedge.
Notes:
To fillet the fish yourself at home: remove the scales from the sardines, detach the head, cut a slit down the side to remove the spines and internal guts and open them like a book. Wash them thoroughly and drain them.
