Gazpacho is a Spanish chilled soup with ripe, fresh tomatoes and other seasonal vegetables. Make a refreshing batch to use up garden vegetables during the hottest days of the year.
What do you need
1/2 kg ripe tomatoes
1/2 green sweet pepper
1 clove of garlic
1/2 cucumber
1 dl of olive oil
4 tablespoons of wine vinegar
1 slice of bread
Cold water
Fine salt to taste
How to proceed
Blanch the tomatoes and remove the skin then place them in the bowl of a blender together with the cucumber, pepper, pepper and garlic.
Also add the bread soaked in water and vinegar.
Blend until you obtain a sauce without lumps then add salt and vinegar until you find the right flavor and, if necessary, olive oil.
Pass the gazpacho through a sieve to eliminate any residue, place it in a bowl, cover it with a transparent film to prevent oxidation of the tomato and put it in the refrigerator for at least 1 hour.
Serve the gazpacho in individual portions accompanying it with croutons, cucumbers and chopped peppers.
