Guacamole a Mexican salsa that has become part of international cuisine as a dip and condiment.

What do you need?
3 very ripe avocados.
1 spring onion.
The juice of 1 lime.
1 teaspoon of freshly chopped cilantro leaves.
Salt to taste.
Chili pepper (optional).
4 cherry tomatoes.
How to proceed?
Mash together onions, cilantro and chilies. U can use a mortar and pestle or a food processor.
Cut the avocados in half discard pits, and spoon out the flesh into a medium bowl.
Roughly mash it with a fork untill you have a creamy consistency. (Some prefer to lightly smash avocado and keep it more chunky, while some others prefer a more creamy guacamole).
Add the onion cilantro mixture.
Add the tomatoes cut into cubes.
Season to taste with salt and lime juice.
Serve immediately with tortilla chips.
