we have kept the memory of the first attempts with imaginative shapes that became more and more precise over the years!
Roll out the dough very finely and with the help of the pastry rings cut out some circles.
Prepare the filling with the spinach, the ricotta, the egg, the parmigiano, the salt, the pepper and the nutmeg and fill the center of each disc of pasta with a little of this filling.
Fold the discs in half and seal the edges with a fork. cook in hot water and season with butter and parmesan.
