Kaiserschmarren or Emperor's sweet omelette; is a very famous dessert throughout the area of the former Austro-Hungarian Empire and in Bavaria.
According to tradition, this dessert was born by mistake in the kitchens of the Imperial Palace: the chef had in fact burned the crepe he had prepared for the Emperor and to hide the error he had cut it into slices, covered with icing sugar and red fruit jam. The emperor was delighted and wanted it included in the court menu.

What do you need?
4 eggs (separate the egg whites from the yolks).
1 pinch of lemon zest.
3 tablespoons of sugar.
200 ml of milk.
4 tablespoons of flour.
1 knob of butter.
3 tablespoon of icing sugar.
Raspberry jam.
How to proceed?
Beat the egg whites until stiff .
In another mixing bowl beat the egg yolks with sugar, add the lemon zest and milk. Add the flour.
Finally add the egg whites whipped until you get a homogeneous cream (remember to always use a spoon to add and mix the egg whites and never the electric whisks).
In a pan over medium heat, melt the butter, pour the mixture over the pan and let it become solid over low heat.
After a few minutes turn the crepe upside down and finish cooking on both sides.
Cut the crepe into small pieces, sprinkle with icing sugar and serve hot with raspberry jam.
