Moroccan Hercha (semolina pancake) by Rochan

A Moroccan pancake made from semolina! For breakfats or tea time, it is delicious served warm with honey or jam.

Cooking time: 10 mins

Prep time: 15 mins

Ingredients for 4 to 6 pancakes

What do you need?

  • 400 grams of semolina.

  • 50 grams of butter melted

  • 1 teaspoon of salt

  • 1 to 2 teaspoons of sugar

  • 11 grams of baking powder

  • 150 ml of milk

How to proceed?

  1. In a bowl mix together all dry ingredients: semolina, sugar, baking powder, and salt.

  2. Add the butter and gently rub with your fingers until the butter is absorbed.

  3. Add the milk, mix and let rest for 3mins.

  4. Make a ball. Shape it the way you like and cook it for 4mins or so on each side.

  5. Slice it, cut in half each slice and serve it warm with honey or with your favorite jam.


Notes

  • You can use water instead of milk and olive oil instead of butter
