Orecchiette With Broccoli Rabe o "Orecchiette con le Cime di Rapa"

Cime di rapa are the leafy green tops and leaves of the plant known as broccoli rabe.

Served with homemade orecchiette brocoli rabes add a delicious bitter flavor and vibrant color to this pasta dish!

Ingredients for 4 people

What do you need?


  • 400 gr of Homemade Orecchiette pasta

  • 1 kg of broccoli rabe (leaves and florets picked from stalks)

  • 1 Garlic cloves

  • 3 Anchovies fillets in oil

  • Salt to taste

  • Extra virgin olive oil


How to proceed?

  1. In a large skillet over medium-low heat add some olive oil, anchovies, and garlic. Cook over medium-low heat, for about 5 minutes stirring occasionally.

  2. Bring a large pot of water to a boil. Add broccoli rabe to boiling water and cook for about 1 minute until tender. Using a large slotted spoon, drain the broccoli rabe and set aside. Keep the boiling water in the pot.

  3. Cook the homemade orecchiette in boiling water for 5 to 7 minutes.

  4. Drain the pasta, add to the skillet. Add the broccoli rabe and cook for 4 to 5 minutes (you can add some pasta cooking water little by little as needed) .

  5. Drizzle with some Extra Virgin Olive Oil and serve right away.
