Cime di rapa are the leafy green tops and leaves of the plant known as broccoli rabe.
Served with homemade orecchiette brocoli rabes add a delicious bitter flavor and vibrant color to this pasta dish!

What do you need?
400 gr of Homemade Orecchiette pasta
1 kg of broccoli rabe (leaves and florets picked from stalks)
1 Garlic cloves
3 Anchovies fillets in oil
Salt to taste
Extra virgin olive oil
How to proceed?
In a large skillet over medium-low heat add some olive oil, anchovies, and garlic. Cook over medium-low heat, for about 5 minutes stirring occasionally.
Bring a large pot of water to a boil. Add broccoli rabe to boiling water and cook for about 1 minute until tender. Using a large slotted spoon, drain the broccoli rabe and set aside. Keep the boiling water in the pot.
Cook the homemade orecchiette in boiling water for 5 to 7 minutes.
Drain the pasta, add to the skillet. Add the broccoli rabe and cook for 4 to 5 minutes (you can add some pasta cooking water little by little as needed) .
Drizzle with some Extra Virgin Olive Oil and serve right away.
