Lamb chops is one of our family all-time favorite! Tender, tasty and comforting! Served with potatoes any various vegetables based on what the season has to offer or what you have in your fridge!

What do you need?
12 lamb chops with bone-in.
Bread crumbs.
A handful of fresh herbs: rosemary, parsley and mint .
Extra virgin olive oil.
Salt to taste.
Pepper to taste.
4 to 5 medium size potatoes.
12 Asparagus, 3-4 carrots or any vegetables in season.
How to proceed?
Cut the potatoes and carrots into small bite sizes. Season with extra virgin olive oil, salt and pepper.
Clean the hard part of the asparagus.
Preheat the oven to 200 degrees Celsius.
Rub the lamb chops with extra virgin olive oil, salt and pepper.
In a food processor, add the handful of herbs and puree them.
In a small bowl, mix the breadcrumbs, with the mix of herbs puree.
Sprinkle both sides of the lamb chops with the crumb mixture.
Place lamb chops and potatoes on the baking tray. Drizzle with some Olive oil.
On another baking tray, arrange the carrots, asparagus, or any vegetable you decide for a side dish. Drizzle with olive oil.
Bake in the oven for about 20 to 30 minutes. Flip the lamb chops and potatoes halfway through the bake.
