Patatas bravas are among our favorite tapas! These are tasty potatoes sautéed with olive oil and flavored with sweet or spicy paprika, the choice is yours!
The name patatas bravas literally means wild potatoes and indicates the simplicity of this dish and also its versatility, in fact potatoes can also be seasoned alternatively with chilli or tabasco and in some versions they are accompanied with a mayonnaise-based sauce. , tomato sauce and garlic.

Potatoes 1 kg
Sweet paprika 10 g
Tomato puree
2 tbsp Red wine vinegar 2 tbsp
Extra virgin olive oil 6 tbsp
Black pepper to taste
Salt up to taste
How to proceed
To make the patatas bravas, wash and peel the potatoes with a potato peeler or paring knife, cut them into small pieces and set aside.
In a small bowl, place the tomato puree and the vinegar, mix the sauce and keep it, it will be used to season the potatoes.
In a large pan pour the olive oil, then add the peppered potato wedges, salt and fry the potatoes for 5 minutes.
Then cover with a lid, lower the heat and cook for about another 20 minutes, checking the cooking from time to time, stirring the potatoes with a ladle, taking care not to flake them.
After this time, flavor the potatoes with paprika and raise the heat, add the tomato puree with the red wine vinegar and cook for another 3 minutes to allow the sauce to absorb.
Now your patatas bravas are ready to be tasted like in Spain: serve them in small earthenware bowls stabbing them with toothpicks, they will be snapped up!
