Who hasn't eaten spinach to become strong like Popeye The Sailor Man?
Spinach are good, healthy, versatile, suitable for preparing many recipes. we love them combined with ricotta and many recipes that we prepare with our children have this combination: spinach and ricotta!
You can use any kind of frozen spinach and ricotta but we love buying everything at the Saturday morning market: fresh spinach (they need to be cleaned very well) and ricotta freshly prepared by our cheesemaker friend.
In all our recipes it will be necessary to clean the spinach, wash the leaves and simmer them in plenty of salted water. once well cooked and drained, the spinach should be squeezed and chopped before being mixed with the ricotta, eggs, salt, grated Parmigiano Reggiano and nutmeg.
You can prepare ravioli, gnudi and even strudel with the same mixture!
