A simple and tasty recipe, perfect for late summer days and autumn, excellent as a side dish, to accompany eggs, meat or a good cheese.
What do you need
4 porcini mashrooms
4 potatoes
1 clove of garlic (minced)
Extra virgin olive oil to taste
Salt and pepper to taste
Parsley to taste
How to proceed
Peel the potatoes and cut them into chunks. In a large pan, sauté the garlic and add the potatoes and salt: cook them initially over high heat, stirring frequently. Then lower the heat, cover the pan with a lid and let it cook for about twenty minutes taking care not to burn them.
In the meantime, clean the porcini mushrooms: remove the earth, eliminate the woody parts, check that there are no worms and clean carefully using a damp cloth.
Cut them into chunks and add them to the potatoes, season with salt and pepper and continue cooking for 15 minutes.
Decorate with parsley.
