If you like particular recipes and love to find something nice and delicious in your dishes, pork ribs in caramel sauce is the right recipe for you. A second dish of meat that becomes a single dish thanks to the fried rice. Simple to do, they are a second course of meat that amazes and surprises.
What do you need
pork chops cut into sections of about 3 cm - 1 kg star anise 1
fresh ginger 3 slices
extra virgin olive oil to taste
brown sugar 30 gr
light soy sauce 30 ml
Chinese wine 20 ml rice vinegar 30 ml
white sesame seeds to taste
onion 1
Salt to taste.
How to proceed
When you want to make this recipe, first cut the ribs into 3 cm sections. Put in boiling water and blanch for 5 minutes. Drain and rinse under running water. Dry the meat with kitchen paper.
Add the oil and sugar to the wok evenly over low heat.
Once the sugar has dissolved, stir in the pork ribs. Sauté everything in order to mix the flavors. Add the soy sauce, wine and vinegar and stir to make sure the ribs are well coated. Add just enough hot water to cover the pork ribs and bring to a boil. Add the ginger, spring onion and star anise and a pinch of salt.
Cover and simmer for 30-35 minutes until the pork is tender.
Uncover and cook over medium heat to reduce the sauce until it thickens and becomes sticky enough to coat the pork. Stir once or twice during the operation.
Remove the ginger, the spring onion, set aside the green and the star anise.
Serve with the sesame seeds and garnish with the green part of the sliced onion.
Pork ribs are excellent with sweet and sour peppers and aubergines.
