A typical dish of the Venetian cuisine using as a main ingredient the Treviso Red Radicchio. The flavor is bitter, and the consistency is crispy.
The Radicchio rosso in saor can be served as an appetizer or side dish with meat or various types of cheese.

What do you need?
6 Red radicchio of Treviso
150 gr yellow onions
½ glass of red wine vinegar
1 teaspoon of sugar
40 gr of raisins left to soak in cold water
40 gr of pine nuts
Extra virgin olive oil to taste
salt to taste
pepper to taste
How to proceed?
Cut the heads of radicchio into four parts lengthwise.
Heat the olive oil in a large pan over medium-high heat.
Add the onions and cook, stirring occasionally for 4 to 5 minutes, until translucent.
Stir in vinegar, sugar, pine nuts and raisins.
Add the radicchio, lower the heat, cover the pan and cook for 6 to 8 minutes mixing every now and then.
Season with salt and pepper to taste.
Notes:
Serve radicchio in saor warm or cold, as a side dish or on top of toasted bread.
Refrigerate for up to a week.
