Roasted pepper with breadcrumbs or Peperoni ammollicati

A quick, simple and very tasty dish to prepare. Roasted pepper with breadcrumbs combine the sweetness flavor of the peppers with the sharp flavor of the capers and a topping of breadcrumbs mixed with parmesan cheese. You can eat them both hot and cold; they are perfect as a side dish and equally good served as an appetizer over a toasted bread as a bruschetta.

Ingredients for 4 people

What do you need?


  • 2 red bell peppers

  • 2 yellow bell peppers

  • 1 tablespoon of salted capers washed and rinsed

  • Salt, pepper, oregano to taste

  • Freshly chopped parsley

  • 1 tablespoon of grated Parmesan cheese

  • 2 tablespoons of breadcrumbs

  • Extra Virgin Olive Oil


How to proceed?


  1. Wash the bell peppers, trim and cut each into eight strips lengthwise.

  2. On a pan over medium heat add some olive oil and cook the strips of peppers gently for 10 to 12 minutes.

  3. Add salt, pepper, parsley, oregano and capers.

  4. Add the parmesan and breadcrumbs, cover, lower the heat and continue cooking for another 5 – 6 minutes.

  5. Serve warm or at room temperature.
