“Insalata Russa”, called as well Italian-style coleslaw, a dish that has always brought families together around the holiday table. It will be a perfect dish to be included on your Christmas menu!!
A cold appetizer, known practically all over the world. Each has his own recipe yet the basic concept is some boiled vegetables tied together with a mayonnaise sauce. Our recipe today present the Genovese version of this dish.

What do you need?
150 g carots
300 gr potatoes
150 gr of frozen green peas
125 gr of pickled vegetables
320 gr of Tuna in oil
2 tablespoon of Extra Virgin Olive Oil
2 teaspoons of apple cider vinegar
4 generous tablespoons of freshly homemade mayonnaise (follow the link of recipe)
Salt to taste
Black pepper to taste
For decoration:
Some various pickled vegetables
Taggiasca olives
Mayonnaise to taste
How to proceed?
In a pot, bring some water to boil, add the potatoes and cook for 20 min or until tender.
Remove the potatoes; mash them with a potato masher or using a fork. Transfer to a large bowl.
Add the carrots to boiling water and cook for 5 to 7minutes. Drain and cut the carrots to ½ cm cubes set aside.
Add the frozen peas to boiling water and cook for 7 to 10 minutes. Drain and set aside.
Add the carrot cubes and cooked peas to mashed potatoes.
Cut the pickled vegetables and add them to the mix.
Add the tuna.
Season with salt, pepper, olive oil and apple cider vinegar. Stir gently.
Add the freshly homemade mayonnaise into the vegetables and mix. If the mixture is too thick, add a teaspoon of vinegar.
Arrange the prepared salad mix on a serving dish (you can make any shape you want: rounded, oval, rectangle or even a Christmas tree shape) do not be afraid of asking for some help from your kids. Spread the surface with mayonnaise, then decorate with sliced pieces of pickled vegetables you can have fun with you little ones decorating this plate!
