Seriously delicious homemade sauces

Ketchup, Barbecue sauce and Mayonnaise! Famous all around the world, these sauces are always a great addition to various sandwiches and plates. Super quick and easy to make, it is worth trying a homemade version that everyone is sure to love!


Ketchup

Cooking time: 40 mins

Prep time: 15 mins

What do you need?

  • 350 gr of tomato sauce

  • 50 gr of extra virgin olive oil

  • 100 gr of chopped onions

  • 2 tablespoons of sugar

  • 1 tablespoon of paprika

  • 1 teaspoon potato starch

  • 1 teaspoon of ginger powder (optional)

  • 3 cloves (optional)

  • salt to taste

  • nutmeg to taste

How to proceed?

  1. In a saucepan, over medium heat, add the oil and cook the sliced onions until soft, sweet and lightly browned.

  2. Add ginger, paprika and cloves and cook for few minutes.

  3. Add the tomato sauce.

  4. Add potato starch, sugar, salt and flavor with a little grated nutmeg.

  5. Mix and cook for about an hour on a medium low heat.

  6. Blend the mixture until you get a smooth consistency.

  7. Let it cool.

  8. Your ketchup sauce is ready: use it immediately in any of your favorite recipes. Alternatively, refrigerate in a sealed container for up to 1 week.


 

Barbecue sauce

Cooking time: 20 mins

Prep time: 15 mins


What do you need?

  • 200 gr of tomato sauce

  • 1 tablespoon of concentrated tomato paste

  • 1 tablespoon of ketchup

  • 2 tablespoons of brown sugar

  • 30 gr of butter

  • 2 tablespoons of white wine vinegar

  • 1 onion (chopped)

  • 1 garlic (chopped)

  • some drops of Tabasco sauce

  • 2 tablespoons of Worcestershire sauce

  • 1 tablespoon of paprika

  • ¼ tablespoon of cayenne pepper (optional)

How to proceed?

  1. In a saucepan, over medium heat, melt the butter, add the onion and cook until golden brown.

  2. Add the garlic and cook for few more minutes.

  3. Add tomato sauce.

  4. Add concentrate tomato paste, ketchup, vinegar, mustard, and sugar. Mix well and cook for 20 minutes over low heat.

  5. Let it cool.

  6. Strain the barbecue sauce with the help of a sieve, and then add salt, pepper and some drops of Tabasco and Worcestershire sauce.

  7. Your barbecue sauce is ready: use it immediately in any of your favorite recipes. Alternatively, refrigerate in a sealed container for up to 1 week.,


 

Mayonnaise

No Cooking is needed

Prep time: 15 mins


What do you need?

  • 1 egg at room temperature (use always fresh organic eggs)

  • 150gr of sunflower or peanut oil

  • half a lemon juice

  • 1 tablespoon of white wine vinegar

  • salt to taste

How to proceed?

  1. In a food processor, add the egg and process for 20 to 30 seconds

  2. Add slowly the oil one drop at a time: be careful adding the oil too quickly will cause the mayonnaise to split and curdle.

  3. Once all the oil has been whisked into the egg and you have a smooth, and creamy texture add the vinegar, salt and lemon juice.

  4. Your mayonnaise is ready to be used or refrigerate for up to 3 days .
