Shrimps and quinoa

Easy to make! Shrimps and quinoa salad is an easy-to-make quick meal, that is healthy and filling. It includes vegetables with ready-to-eat cooked shrimp tossed in a honey-lemon vinaigrette and mustard.



What do you need

1 cup dry quinoa

12 shrimp, peeled and deveined

1 zucchini cut into cubs

2 green onions, sliced

Honey Lemon Vinaigrette

1/4 cup + 2 tbsp. extra-virgin olive oil

1 Tbsp. lemon zest, from about 2lemons

2 Tbsp. fresh lemon juice

1 tsp. honey, plus more to taste

1/2 tsp. Dijon mustard

salt and pepper to taste



How to proceed

Cook quinoa according to package directions. Cool completely.

In a large pan, sauté the onion, courgettes and Shrimps. Add salt and pepper.

In a mixing bowl, combine the cooled quinoa, shrimp and vegetables

In a separate bowl, whisk together the vinaigrette ingredients. Add to the salad and toss to combine. Taste for salt and pepper. Chill the salad for about 30 minutes before serving.
