Spicy Sweet and Sour Eggplants and Peppers are a Thai-inspired side dish, simple to prepare but super tasty. Ideal as a side dish but also as an appetizer, these spicy sweet and sour aubergines are excellent both hot and cold, which makes them perfect for all seasons.
What do you need
6 Chinese eggplants
2 peppers (red or yellow)
1 red onion
spicy Thai sweet and sour sauce to taste peanut oil to taste
salt to taste
How to proceed
For this recipe you need the Thai spicy sweet and sour sauce: if you can't find it at the supermarket you can easily make it at home following our recipe of Thai spicy sweet and sour sauce.
To prepare the spicy sweet and sour peppers and aubergines, start by taking care vegetables: remove the stalk and cut them into small pieces, then keep them aside for a moment. Heat a generous drizzle of seed oil in a large pan with high sides placed on a high heat and as soon as it is hot, fry the chopped vegetables, salt them lightly and let them brown until they are well browned and colored. Usually for this kind of preparation I use a Wok which is very large and perfect for this kind of cooking. As soon as the vegetables are cooked, soft and golden, add plenty of Thai spicy sweet and sour sauce (according to your taste) and mix everything well, then continue cooking for a few more minutes. Serve your spicy sweet and sour aubergines on the table when they are still hot!
