We cannot speak about Greek cuisine without trying one of the most famous Greek savory pies: Spanakopita. Definitely worth a try!
The main ingredient is spinach yet feel free to add other greens you happen to have on hand. Mixed with feta cheese and leeks all enfolded by crispy, flaky filo pastry dough.

What do you need?
1 kg spinach, washed and stems removed
1 leak the white part
2-3 small spring onions chopped
2-tablespoon salt
250 g feta cheese
1 pinch white pepper
½ tablespoon dill, finely chopped
1 tablespoon mint, finely chopped
1 tablespoon of fresh parsley chopped
Salt to taste
Pepper to taste
5 tablespoons of olive oil
a pack of refrigerated filo pastry
How to proceed?
Prepare the pie filling
Wash and cut the spinach leaves. Sprinkle with salt and set aside for 10 minutes.
Squeeze the spinach with your hand and remove as much water from the spinach as you can so it does not make the pastry base soggy.
On a skillet over medium high heat, add 3 tablespoons of olive oil. Sauté onion and leeks until soft and translucent set aside and let it cool to room temperature.
Add the all the remaining ingredients. Mix filling well until combined.
Assemble the pie
Take the filo pastry out of the fridge 30 minutes prior to bring it to room temperature.
Prepare the baking dish
Lay a sheet of filo pastry on the baking dish, then brush with olive oil.
Top with another sheet of filo pastry, Bruch with olive oil as well. Continue repeating until you have used 5 to 6 sheets in total
Spread the filling
Cover the filling with a sheet of filo pastry. Brush with olive oil. Cover with another sheet of filo pastry and repeat until you have used 5 to 6 sheets in total.
Using a sharp knife cut the pastry into squares before baking.
Preheat the oven to Preheat oven to 220°C
Bake for 25 to 30 minutes, or until golden brown on the surface.
Serve immediately!
