Our stuffed tomatoes are easy to prepare and are a perfect side dish for summer dinners in the garden. Just a few ingredients for this colourful recipe!
What do you need
1 kg San Marzano tomatoes
300 gr pitted green olives
1 little fresh onion
1 garlic cloves
a handful of salted capers
1 tbl spoon fresh chopped parsley
Oil and salt to taste
1 cup breadcrumbs
How to proceed
Wash the tomatoes, cut them lengthwise, remove the inner part that you will keep in the mixer.
Spread the tomatoes on an oiled baking sheet.
Peel the garlic and the onion, remove the excess salt from the capers, drain the olives and add all the ingredients to the tomato pulp that you have kept aside.
Blend everything by adding breadcrumbs in order to reach a fairly firm consistency.
Taste the dough and, if needed, add salt.
Fill the tomatoes and fill the tomatoes with this mixture.
Cook in a preheated oven for half an hour at 180 degrees C.
Let it cool and add a drizzle of oil.
