Tabbouleh (or Tabulè) is a typical Lebanese dish very popular throughout the Middle East. A salad of chopped tomatoes and cucumbers accompanied by the typical Bulgur (broken wheat) and dressed with parsley, mint, oil and lemon juice. In the Lebanese recipe, Parsley is predominant enough to make the Green tabbouleh visible. In other versions, bulgur is the main ingredient. Whatever recipe you choose to follow, the Tabbouleh is a Fresh, Tasty and Healthy dish.
Although the original recipe calls for the use of Bulgur, be aware that the Tabbouleh can also be prepared with Cous Cous, Quinoa or Buckwheat (in these two latter cases without gluten). All versions are very good!
What do you need
2 cups of finely chopped parsley
1/4 cup very fine bulghur
1 large or 2 medium diced tomato
1 finely sliced fresh shallot into small cubes or a small yellow onion
a little finely chopped mint (if not fresh you can use the dry)
one Juice of 1-2 lemons
4 tablespoons of extra virgin olive oil (even more to taste)
1/2 teaspoon of salt
How to proceed
mix everything ... let it rest in the fridge for 20 min
