Tomatokeftedes are delicious fried tomato balls served as an appetizer on the Greek island of Santorini! They taste absolutely fabulous. The main ingredient is super ripe fresh tomatoes mixed with fresh herbs. Fried and served with Greek yogurt. Kids will love them too!

What do you need?
3 to 5 medium sized tomatoes chopped
½ red onion finely chopped
100 gr floor
¼ teaspoon cinnamon
2-3 tablespoons fresh chopped mint
1-2 teaspoons dry oregano
1 tablespoon fresh dill
¼ teaspoon baking soda
Salt to taste
Pepper to taste
Olive oil or sunflower oil for frying
How to proceed?
Wash the tomatoes, cut in half and remove the insides.
Cut the pulp into cubes and put in a large mixing bowl.
Add onions, fresh herbs oregano and cinnamon. Mix well with a fork.
Add the flour little by little mixing with the fork (you can add as much as needed depending on the moisture of the fritter mixture).
Refrigerate for 15 to 20 minutes.
Add baking soda. Mix well.
Heat the oil in a large deep skillet over medium high heat.
Take spoonful of the fritter mixture and fry them on both sides until golden brown (2 to 3 minutes per side).
Drain on absorbent paper. Serve hot immediately, accompanied with Greek yogurt.
